With over 100 years in the pasta making business, we know the value of superior  semolina.  It puts the "aldente" in pasta.  To maintain optimum control of the quality of the flour used in our own pasta, we built a milling plant in the center of the world's finest durum wheat fields...Minot, North Dakota.

The extraction of semolina from the heart of the wheat is a a delicate process.  We control the integrity of the process and preserve the quality of the wheat by using the most-sophisticated Buhler milling technology.

At Minot Milling, we are focused.  We only mill and sell durum products of the highest quality using in pasta production.  Sourcing our own durum wheat enables us to select the grains that simply make the best semolina for the pasta industry.
